We were delighted to have been invited to takeover the Countryfile website this week.

Our Hettie Collections have been inspired by the wonderful things we see around us every day. Classic British accessories inspired by our local British landscape. All of the materials used reflect the natural colour tones found within the British Countryside- for country style living inspired by nature.

Exploring in the woods

Our pretty Hettie Woodland Collection  is inspired by our adventures in the woods. Calm and quiet, but full of changing life. We wanted to capture the stunning backdrop of the trees against the glorious flowers and leaves which change throughout the seasons. We created this collection to remind us of the feelings we have when walking in the woods.

Picking blackberries together

A favourite pastime this time of year is picking blackberries together and then making blackberry and apple crumble. Like classic fruit crumble but in a cuttable, transportable bar, these delicious crumble squares are perfect for an end of summer picnic.

Ingredients

  • Medium cooking apples (about 550-600g whole weight) 2, peeled, cored & diced
  • Blackberries 150g
  • Granulated sugar 2-3 tbsp, adjust to taste
  • water 100ml
  • butter 200g, softened
  • Light brown sugar 200g
  • self raising flour 200g
  • bicarbonate of soda 1tsp
  • Porridge oats 150g
  • You will also need a 20×30 cm tin, about 2cm deep, greased & lined with baking paper

Method

  • STEP 1

    Preheat the oven to 200°C/180°C fan/gas 6.

  • STEP 2

    Add the apple, blackberries, sugar and water to a medium pan. Cover and simmer gently until soft – about 8-10 minutes. Set aside.

  • STEP 3

    Whizz together the butter and sugar in a food processor until creamed, then add the flour and bicarbonate of soda and pulse until combined; the mixture will be quite crumbly.

  • STEP 4

    Lastly, add the oats and pulse again until mixed. Tip about two thirds of the crumble mix into the prepared tin and press down well with the back of a spoon. Spread the fruit all over the base evenly.

  • STEP 5

    Sprinkle over the remaining crumble mixture then bake for 25 minutes until the top is crisp and golden.

  • STEP 6

    Remove from the oven and allow to cool completely in the tin before cutting into squares.
